  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian herbs

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Position the oven rack in the center position.
  2. Prepare your vegetables. Cut all vegetables into pieces of roughly the same size. This step is important for even cooking.
  3. Place the cut vegetables in a large bowl. Drizzle with the olive oil.
  4. Sprinkle the salt, pepper, garlic powder, and Italian herbs over the vegetables. Toss everything together until the vegetables are evenly coated with oil and seasoning.
  5. Spread the seasoned vegetables onto a large, rimmed baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary. Overcrowding causes steaming, which leads to mushy vegetables.
  6. Roast for 20 to 25 minutes. Halfway through the cooking time (around 12 minutes), remove the pan and toss the vegetables to promote even browning.
  7. Continue roasting until the vegetables are tender when pierced with a fork and have developed dark, caramelized edges.
