This classic Jewish apple cake delivers a moist texture, rich cinnamon flavor, and a crisp cinnamon-sugar topping. It is a simple, dairy-free recipe perfect for holidays or everyday enjoyment.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened applesauce
  • 1/4 cup orange juice
  • 3 large Granny Smith apples, peeled, cored, and diced
  • 1/2 cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tube pan or Bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 1/2 teaspoons of cinnamon. Set aside.
  3. In a large bowl, whisk together the 1 cup granulated sugar, brown sugar, and vegetable oil until combined.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, applesauce, and orange juice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the diced apples.
  7. Pour half of the batter into the prepared pan. Sprinkle half of the topping mixture (1/4 cup sugar mixed with 1/2 teaspoon cinnamon) evenly over the batter.
  8. Pour the remaining batter over the topping layer. Sprinkle the remaining topping mixture over the top.
  9. Bake for 60 to 75 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan on a wire rack for 15 minutes.
  11. Invert the cake onto the rack and allow it to cool completely before slicing.

Notes

  • For the best results and a very moist cake, use firm, tart apples like Granny Smith.
  • You can substitute the orange juice with apple juice if preferred.
  • This cake is naturally dairy-free, making it suitable for serving with meat meals.
