Prepare a nutrient-dense, elegant dinner featuring tender salmon fillets coated in a savory, crunchy walnut crust. This recipe delivers high omega-3s and protein.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 cup raw walnuts
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Place the walnuts in a food processor and pulse until they form a coarse meal. Do not over-process into butter.
  3. In a shallow bowl, combine the ground walnuts, panko breadcrumbs, thyme, salt, and pepper. Mix well.
  4. In a separate small bowl, whisk together the Dijon mustard and olive oil.
  5. Brush the top side of each salmon fillet evenly with the mustard mixture.
  6. Press the mustard-coated side of each fillet firmly into the walnut mixture to create a thick crust.
  7. Place the crusted salmon fillets on the prepared baking sheet.
  8. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork and the crust is golden brown.

Notes

  • For an extra layer of flavor, you can add 1 teaspoon of lemon zest to the walnut crust mixture.
  • Serve this healthy salmon recipe with roasted asparagus or a simple green salad for a complete meal.
  • This baked walnut salmon reheats well in a toaster oven to maintain crust crispness.
