Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
1 cup raw walnuts
1/4 cup panko breadcrumbs
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Place the walnuts in a food processor and pulse until they form a coarse meal. Do not over-process into butter.
In a shallow bowl, combine the ground walnuts, panko breadcrumbs, thyme, salt, and pepper. Mix well.
In a separate small bowl, whisk together the Dijon mustard and olive oil.
Brush the top side of each salmon fillet evenly with the mustard mixture.
Press the mustard-coated side of each fillet firmly into the walnut mixture to create a thick crust.
Place the crusted salmon fillets on the prepared baking sheet.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork and the crust is golden brown.
Notes
For an extra layer of flavor, you can add 1 teaspoon of lemon zest to the walnut crust mixture.
Serve this healthy salmon recipe with roasted asparagus or a simple green salad for a complete meal.
This baked walnut salmon reheats well in a toaster oven to maintain crust crispness.
