  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice, rinsed
  • 1 cup water
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt

Instructions

  1. Combine the coconut milk, water, sugar, and salt in a medium saucepan. Stir to dissolve the sugar and salt.
  2. Add the rinsed jasmine rice to the saucepan and stir once.
  3. Bring the mixture to a boil over medium-high heat. Watch carefully to prevent boiling over.
  4. Once boiling, immediately reduce the heat to the lowest setting. Cover the saucepan tightly with a lid.
  5. Simmer undisturbed for 15 minutes. Do not lift the lid during this time.
  6. Remove the saucepan from the heat. Keep the lid on and let the rice steam for an additional 10 minutes.
  7. Remove the lid and use a fork to gently fluff the rice. Serve warm as an easy side dish.

Notes

  • Rinsing the jasmine rice removes excess starch, which helps achieve a fluffier texture.
  • For an extra layer of flavor, you can add 1/2 teaspoon of lime zest to the rice after fluffing.
