  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup packed brown sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, salt, granulated sugar, and 1 teaspoon of cinnamon for the topping mixture.
  3. In a separate small bowl, whisk together the melted butter, milk, egg, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Pour the batter evenly into the prepared baking dish.
  6. In a small bowl, mix the brown sugar and the remaining 1 tablespoon of cinnamon for the topping. Sprinkle this mixture evenly over the batter.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the cobbler cool slightly before serving warm with vanilla ice cream.
