  • 2 lbs boneless, skinless chicken breasts
  • 1 large lemon, juiced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water or chicken broth
  • For Serving: Pita bread, sliced tomatoes, sliced red onion, lettuce, feta cheese, Homemade Tzatziki Sauce

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker insert.
  2. In a small bowl, whisk together the lemon juice, olive oil, red wine vinegar, oregano, thyme, garlic powder, onion powder, salt, and pepper.
  3. Pour the seasoning mixture over the chicken. Add the water or broth to the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the chicken completely.
  6. Return the shredded chicken to the slow cooker and toss it with the cooking liquid to coat it thoroughly. Keep warm on the ‘Keep Warm’ setting until ready to serve.
  7. Warm your pita bread according to package directions.
  8. Assemble your gyros: Fill each pita with a generous portion of the shredded Greek chicken, then top with tomatoes, red onion, lettuce, feta cheese, and a drizzle of homemade tzatziki sauce.

Notes

  • For the best flavor, make the homemade tzatziki sauce while the chicken cooks.
  • This shredded Greek chicken is excellent for meal prepping; store leftovers in an airtight container for up to four days.
  • If you prefer a slightly tangier flavor, add 1 teaspoon of dried dill to the chicken seasoning mix.
