Make this classic, flavorful tomato basil soup using basic ingredients. This recipe is quick, easy, and perfect for a comforting weeknight dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes (use good quality for best flavor)
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh basil leaves, packed

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 to 7 minutes.
  2. Add the minced garlic to the pot and cook for 1 minute more until fragrant. Do not let the garlic burn.
  3. Pour in the crushed tomatoes and vegetable broth. Stir well to combine.
  4. Add the sugar, salt, and pepper. Bring the soup to a simmer. Reduce the heat to low, cover partially, and let it cook for 15 minutes to allow the flavors to meld.
  5. Remove the pot from the heat. Stir in the fresh basil leaves.
  6. Use an immersion blender to blend the soup until smooth, or carefully transfer the soup in batches to a standard blender and blend until smooth. Return the blended soup to the pot.
  7. Heat the soup gently for 2 minutes if needed, but do not boil after blending. Taste and adjust salt and pepper as needed before serving.

Notes

  • For a richer flavor, use fire-roasted crushed tomatoes.
  • If you prefer a creamier texture without adding cream, blend in one small cooked potato with the soup.
