Scale
1 (24 ounce) jar salsa (medium heat recommended)
3 pounds boneless, skinless chicken breasts
Instructions
Place the chicken breasts in the bottom of your slow cooker.
Pour the entire jar of salsa over the chicken, ensuring the meat is mostly covered.
Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and easily shreds.
Remove the chicken breasts from the slow cooker and place them in a large bowl.
Use two forks to shred the chicken completely.
Return the shredded chicken to the slow cooker and stir it well with the remaining salsa liquid to coat evenly.
Shredded chicken is now ready to use for tacos, bowls, or salads.
Notes
For cleaner eating dinner results, choose a salsa with no added sugar.
Shredding is easiest when the chicken has rested for 10 minutes after cooking.
This 2 ingredient chicken freezes well for future meal prep sessions.
