1 tablespoon olive oil
4 cloves garlic, minced
1/2 cup honey
1/4 cup low sodium soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions
Pat the chicken thigh pieces dry with paper towels. Season lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and mostly cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the honey, soy sauce, rice vinegar, ginger, and red pepper flakes (if using). Bring the mixture to a gentle simmer, stirring constantly.
Whisk the cornstarch slurry one more time and slowly pour it into the simmering sauce while stirring continuously. Cook for 1 to 2 minutes until the sauce thickens into a sticky glaze.
Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated in the thick honey garlic sauce. Cook for 1 minute to heat through.
Remove the skillet from the heat. Stir in the sesame oil.
