1 cup oat flour
1/2 cup non-fat cottage cheese
1/4 cup plain Greek yogurt
1 large egg white
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup zero-calorie sweetener (granular)
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
For the Filling:
1/4 cup zero-calorie sweetener (granular)
2 teaspoons ground cinnamon
1 tablespoon melted butter or coconut oil
For the Glaze:
1/2 cup non-fat Greek yogurt
2 tablespoons powdered zero-calorie sweetener
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line a small baking sheet with parchment paper.
Prepare the dough: In a food processor, combine the oat flour, cottage cheese, Greek yogurt, egg white, baking powder, and salt. Process until a soft dough forms.
Turn the dough out onto a lightly floured surface (use a little extra oat flour). Knead briefly until smooth.
Roll the dough into a rectangle approximately 8×10 inches.
Prepare the filling: In a small bowl, mix the 1/4 cup sweetener and cinnamon. Brush the melted butter or coconut oil over the dough surface. Sprinkle the cinnamon-sugar mixture evenly over the dough.
Starting from the long edge, roll the dough tightly into a log. Slice the log into 4 equal rolls.
Place the rolls on the prepared baking sheet. Bake for 15 to 18 minutes, or until lightly golden brown.
Prepare the glaze: While the rolls cool slightly, whisk together the Greek yogurt, powdered sweetener, and vanilla extract until smooth.
Drizzle the glaze over the warm protein cinnamon rolls before serving.
Notes
For a lower calorie count, use a sugar-free glaze.
You can use regular all-purpose flour if oat flour is unavailable, but the texture will change.
