Ingredients
Scale
4 large flour tortillas (10-inch size)
1 cup pizza sauce
2 cups low-moisture mozzarella cheese, shredded
1 cup sliced pepperoni
2 tablespoons butter or olive oil, unsalted
1 teaspoon Italian seasoning (optional)
1/4 teaspoon red pepper flakes (optional)
2 tablespoons grated Parmesan cheese (optional)
Instructions
Place one large flour tortilla on a clean surface. Spread 1/4 cup of pizza sauce evenly over the surface, leaving a one-inch border around the edge.
Sprinkle about 1/2 cup of mozzarella cheese over the sauce.
Arrange pepperoni slices over the cheese. Sprinkle with Italian seasoning and red pepper flakes, if using.
Top with the second tortilla. Gently press the two tortillas together to seal the edges.
Heat a large nonstick skillet over medium heat. Add 1 tablespoon of butter or oil to the pan.
Carefully place the assembled quesadilla into the hot skillet. Cook for 3 to 4 minutes until the bottom tortilla is golden brown and crispy.
Gently flip the quesadilla using a large spatula. Add the remaining 1 tablespoon of butter or oil to the skillet next to the quesadilla.
Cook the second side for another 3 to 4 minutes until it is golden brown and the cheese inside is fully melted and gooey.
Remove the quesadilla from the skillet. Let it rest for one minute before slicing it into wedges.
Repeat the process with the remaining tortillas and fillings to make the second pizza quesadilla.
Serve immediately with extra pizza sauce or ranch dressing for dipping.
Notes
For the crispiest results, use a medium heat setting and do not rush the cooking time in the skillet. Low moisture mozzarella melts well and prevents sogginess.
You can substitute beef pepperoni or add other favorite pizza toppings like cooked sausage or sliced mushrooms.
This recipe is a great quick lunch hack; cut the recipe in half to make single-serving quesadillas.
