Make this easy, no-bake Pistachio Puppy Chow using pistachio pudding mix for a vibrant, crunchy snack perfect for holiday parties or edible gifts.

Ingredients

Scale
  • 12 cups Rice Chex cereal
  • 1 (12 ounce) package white chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 4 cups powdered sugar
  • 1/2 cup chopped pistachios (optional mix-in)

Instructions

  1. Place the Rice Chex cereal in a very large bowl. Set aside.
  2. In a medium microwave-safe bowl, combine the white chocolate chips and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring well after each, until completely smooth.
  3. Stir the peanut butter and vanilla extract into the melted chocolate mixture until fully combined.
  4. Pour the chocolate mixture over the cereal in the large bowl. Gently fold the cereal until every piece is evenly coated.
  5. Sprinkle the entire package of instant pistachio pudding mix over the coated cereal. Gently fold again until the pudding mix adheres to the chocolate coating. If using, fold in the chopped pistachios now.
  6. Place the powdered sugar into a large, sealable plastic bag. Add the coated cereal mixture to the bag. Seal the bag, leaving some air inside. Shake the bag vigorously until all the cereal pieces are thoroughly coated with powdered sugar.
  7. Spread the finished Pistachio Puppy Chow onto a large baking sheet lined with parchment paper to cool and set completely.
  8. Break apart any large clumps before serving or storing.

Notes

  • For the brightest green color, look for pistachio pudding mix specifically formulated with artificial coloring.
  • You can substitute Rice Chex with Corn Chex or Wheat Chex cereal for a slight texture change.
  • This snack mix stores well in an airtight container at room temperature for up to one week.
  • For giftable dessert mixes, package the cooled chow in clear cellophane bags and tie with a festive ribbon.
