Make this bright, non alcoholic pink lemonade from scratch using fresh raspberries for a natural color and flavor. It is a refreshing summer mocktail.

Ingredients

  • 1 cup fresh lemon juice
  • 1 cup granulated sugar
  • 1 cup water (for simple syrup)
  • 1 cup fresh or frozen raspberries
  • 4 cups cold sparkling water or club soda
  • Ice cubes
  • Lemon slices and extra raspberries for garnish

Instructions

  1. Make the raspberry simple syrup: Combine the sugar and 1 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely.
  2. Add the raspberries to the saucepan. Bring the mixture to a gentle simmer and cook for 5 minutes, lightly crushing the berries with a spoon.
  3. Remove the syrup from the heat and let it steep for 15 minutes to deepen the color and flavor.
  4. Strain the syrup through a fine-mesh sieve into a bowl, pressing on the solids to extract all the liquid. Discard the solids. You now have your homemade pink lemonade syrup.
  5. In a large pitcher, combine the strained raspberry syrup and the fresh lemon juice. Stir well.
  6. To serve, fill glasses with ice. Pour the lemonade base into the glasses, filling them about one-third full.
  7. Top each glass with cold sparkling water or club soda. Stir gently.
  8. Garnish each glass with a lemon slice and a few fresh raspberries.

Notes

  • For a deeper pink color, steep the raspberries for an extra 10 minutes before straining the syrup.
  • If you prefer a less sweet drink, reduce the initial amount of sugar in the syrup to three-quarters of a cup.
  • This recipe makes a great party pink lemonade base; prepare the syrup and lemon juice mixture ahead of time and keep it chilled.
