Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup chopped pecans, toasted
  • 1/2 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 2 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Dippers: apple slices, graham crackers, vanilla wafers, pretzels

Instructions

  1. In a large bowl, beat the softened cream cheese and butter together until smooth.
  2. Add the powdered sugar, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Beat until the mixture is fully combined and creamy.
  3. Press this cream cheese mixture evenly into the bottom of an 8-inch pie plate or a shallow serving dish. Chill in the refrigerator for at least 30 minutes to set.
  4. While the base chills, prepare the topping. In a small saucepan, combine the brown sugar, corn syrup, heavy whipping cream, 1/2 teaspoon vanilla extract, and a pinch of salt.
  5. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves and the mixture just begins to bubble. Remove from heat immediately.
  6. Stir in the toasted chopped pecans until they are fully coated in the caramel mixture.
  7. Remove the chilled base from the refrigerator. Spoon the warm pecan mixture evenly over the cream cheese layer.
  8. Return the dip to the refrigerator and chill for at least 1 hour before serving. This allows the topping to set slightly.
  9. Serve cold with your choice of dippers.

Notes

  • Toast the pecans lightly in a dry skillet over medium heat for 3 to 5 minutes until fragrant. This deepens the flavor.
  • You can make the cream cheese base one day ahead. Keep it covered in the refrigerator.
  • For a presentation that looks like a pie, sprinkle a few extra toasted pecans around the edge of the dip before serving.
