Make this refreshing and easy peach watermelon salad for your next summer gathering. It combines sweet fruit with salty feta and fresh mint for a vibrant side dish.

Ingredients

Scale
  • 4 cups cubed watermelon, chilled
  • 2 large ripe peaches, pitted and sliced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey (optional)
  • Pinch of sea salt

Instructions

  1. Prepare the fruit: Cube the watermelon and slice the peaches. Place both into a large bowl.
  2. Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey (if using), and a pinch of salt.
  3. Combine: Gently pour the dressing over the watermelon and peaches. Toss lightly to coat the fruit evenly.
  4. Add cheese and herbs: Sprinkle the crumbled feta cheese and chopped mint leaves over the salad. Toss once more, very gently, to distribute the additions without crushing the fruit.
  5. Serve immediately: This hydrating fruit salad is best served cold right after assembly for the best texture.

Notes

  • For an added layer of flavor, lightly grill the peach slices for two minutes per side before adding them to the salad.
  • If you prefer a tangier finish, substitute the lime juice with fresh lemon juice.
  • To make this a more substantial appetizer, drizzle a small amount of balsamic glaze over the finished salad just before serving.
