2 large ripe peaches, pitted and sliced
4 ounces feta cheese, crumbled
1/4 cup fresh mint leaves, roughly chopped
2 tablespoons fresh lime juice

Instructions
Prepare the fruit: Cube the watermelon and slice the peaches. Place both into a large bowl.
Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey (if using), and a pinch of salt.
Combine: Gently pour the dressing over the watermelon and peaches. Toss lightly to coat the fruit evenly.
