  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 pound fresh strawberries, sliced
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened.
  2. Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Place the crust in the freezer while you prepare the filling.
  3. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the powdered sugar and vanilla extract, mixing until fully combined and creamy.
  4. Slowly beat in the heavy cream until the filling is light and fluffy. Do not overmix.
  5. Spread the cream cheese filling evenly over the chilled crust.
  6. Arrange the sliced strawberries over the top of the cheesecake. Sprinkle the remaining 2 tablespoons of granulated sugar over the strawberries.
  7. Cover the pan loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until firm.
  8. Before serving, carefully release the springform side. Slice and serve this cool and creamy dessert.
