Make these simple, no bake hazelnut cacao energy bites using whole foods. This recipe is fast, requires no oven, and makes a great gluten-free snack.

Ingredients

  • 1 cup rolled oats (ensure gluten-free if needed)
  • 1/2 cup raw hazelnuts, lightly toasted
  • 1/2 cup pitted Medjool dates
  • 1/4 cup raw cacao powder
  • 2 tablespoons smooth hazelnut butter
  • 1 tablespoon chia seeds
  • 12 tablespoons water (as needed)
  • Pinch of sea salt

Instructions

  1. Place the toasted hazelnuts in a food processor and process until they form a coarse meal. Do not over-process into butter.
  2. Add the rolled oats, cacao powder, chia seeds, and salt to the food processor. Pulse several times until everything is combined with the ground hazelnuts.
  3. Add the pitted dates and hazelnut butter. Process continuously until the mixture starts to clump together. Stop and scrape down the sides as needed.
  4. If the mixture is too dry to hold a shape, add water one teaspoon at a time while processing until the dough sticks together when pressed between your fingers.
  5. Remove the dough from the processor. Roll the mixture into small, one-inch balls.
  6. Place the energy bites on a parchment-lined plate or tray.
  7. Refrigerate for at least 30 minutes to firm up before serving. Store leftovers in an airtight container in the refrigerator.

Notes

  • For a stronger hazelnut flavor, use homemade hazelnut butter if possible.
  • You can roll the finished bites in extra cacao powder or finely chopped nuts for coating.
  • This recipe is naturally vegan and gluten-free if you use certified gluten-free oats.
