Make this easy flatbread pizza for a light Friday dinner or a sophisticated side dish, featuring vibrant red tomatoes and fresh green basil for a Caprese flavor profile.

Ingredients

Scale
  • 1 pre-made flatbread crust (about 1012 inches)
  • 4 tablespoons tomato sauce (high quality)
  • 6 ounces fresh mozzarella cheese, thinly sliced or torn
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper to taste
  • 1/2 cup fresh basil leaves, torn
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Place the flatbread crust directly on the oven rack or on a baking sheet.
  2. Spread the tomato sauce evenly over the flatbread, leaving a small border for the crust.
  3. Arrange the fresh mozzarella slices and halved cherry tomatoes over the sauce.
  4. Drizzle the olive oil lightly over the toppings and sprinkle with sea salt and black pepper.
  5. Bake for 10 to 14 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Remove the flatbread from the oven. Immediately scatter the fresh basil leaves and grated Parmesan cheese over the top.
  7. Slice into wedges and serve immediately for a quick Italian dinner.

Notes

  • For an extra crispy edge, place a pizza stone in the oven while it preheats.
  • Use high-quality ingredients; the simplicity of this recipe means the flavor of the tomatoes and basil is important.
  • This recipe works well as vegetarian party food for gatherings.
