1 cup fresh blueberries
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the crust: In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes. Remove from the oven and set aside.
Prepare the cheesecake filling: In a large bowl, beat the softened cream cheese with 1 cup sugar until smooth. Beat in the vanilla extract, eggs one at a time, then mix in the lemon juice and lemon zest until just combined. Do not overmix.
Pour the cream cheese mixture over the baked crust. Sprinkle the fresh blueberries evenly over the top of the batter.
Bake for 30 to 35 minutes, or until the edges are set and the center has only a slight jiggle.
Let the bars cool completely in the pan on a wire rack. This may take about 1 hour.
Chill the bars in the refrigerator for at least 4 hours, or preferably overnight, before slicing. Use the parchment overhang to lift the bars out of the pan. Cut into squares before serving.
