Transform yesterday’s spaghetti into a cheesy, comforting casserole with this simple recipe. It is a budget meal prep solution that reduces food waste and requires minimal active preparation time.

  • 4 cups leftover cooked spaghetti with sauce
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish with olive oil.
  2. In a large bowl, combine the leftover spaghetti, eggs, milk, half of the mozzarella cheese, and the Parmesan cheese. Mix gently until everything is coated.
  3. Transfer the spaghetti mixture into the prepared baking dish, spreading it into an even layer.
  4. Sprinkle the remaining mozzarella cheese over the top of the spaghetti mixture.
  5. Scatter the breadcrumbs evenly over the cheese layer.
  6. Bake for 25 to 30 minutes, or until the top is golden brown and the casserole is heated through.
  7. Let the baked spaghetti recipe rest for 5 minutes before slicing and serving.
