2 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
1 large red onion, cut into wedges
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 pint cherry tomatoes
1/4 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons dried oregano
1 tablespoon dried thyme
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup crumbled feta cheese (for topping)
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
In a large bowl, whisk together the olive oil, lemon juice, dried oregano, dried thyme, minced garlic, salt, and pepper to create the marinade.
Add the cut chicken pieces, red onion wedges, red and yellow bell peppers to the bowl. Toss everything well until the chicken and vegetables are fully coated in the marinade.
Spread the marinated chicken and vegetables in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure proper roasting.
Roast for 15 minutes.
Remove the pan from the oven. Add the cherry tomatoes to the sheet pan and gently toss them with the other ingredients.
Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the sheet pan from the oven. Sprinkle the crumbled feta cheese evenly over the chicken and vegetables.
Garnish with fresh chopped parsley before serving.

For extra flavor, you can marinate the chicken for up to 4 hours in the refrigerator before baking.
