1 sheet frozen puff pastry, thawed
4 ounces soft goat cheese, chilled
2 tablespoons honey
1 teaspoon fresh thyme leaves
1 egg, beaten (for egg wash)
Pinch of salt
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Lightly dust a clean surface with flour. Unfold the puff pastry sheet.
Cut the pastry sheet into 12 equal squares.
Place the squares on the prepared baking sheet. Score a small border about 1/4 inch from the edge of each square, being careful not to cut all the way through.
Brush the entire surface of the pastry squares lightly with the beaten egg wash.
Place a small spoonful (about 1 teaspoon) of chilled goat cheese in the center of each square, inside the scored border.
Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
Remove the bites from the oven. Immediately drizzle the honey over the warm goat cheese centers.
Sprinkle the fresh thyme leaves and a tiny pinch of salt over the honey.
Serve the goat cheese and honey bites warm or at room temperature.
Notes
For extra crunch, press a few chopped pecans or walnuts onto the goat cheese before baking.
If you prefer a sharper flavor, use a mix of goat cheese and cream cheese.
You can substitute maple syrup for honey if desired.
