1/4 cup olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)
1 tablespoon fresh lemon juice (optional, for finishing)
Wooden or metal skewers (if using wood, soak them for 30 minutes)
Instructions
In a medium bowl, whisk together the olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes if you are using them. This creates your flavorful chicken marinade.
Add the cubed chicken to the marinade. Toss well to coat every piece evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to let the chicken absorb the flavor.
Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
Place the skewers on the preheated grill. Cook for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
