  • 4 tablespoons unsalted butter, divided
  • 4 cloves fresh garlic, minced
  • 1 cup long grain white rice, uncooked
  • 1 3/4 cups low sodium chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. Add the minced garlic to the pan and cook for about 1 minute until fragrant. Do not let the garlic brown.
  3. Add the uncooked rice to the saucepan and stir constantly for 1 to 2 minutes to toast the grains lightly.
  4. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly with a lid, and simmer for 15 minutes without lifting the lid.
  6. Remove the saucepan from the heat and let it stand, covered, for an additional 5 minutes. This step helps the rice steam fully.
  7. Remove the lid, add the remaining 2 tablespoons of butter, and fluff the rice gently with a fork.
  8. Stir in the fresh parsley before serving immediately as a savory rice companion.
