  • 1 pound ground beef
  • 1 medium yellow onion, finely chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 (10.5 ounce) package dry onion soup mix
  • 1 1/2 cups beef broth
  • 1 cup uncooked long-grain white rice
  • 1 cup shredded Swiss cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup crispy fried onions, for topping

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the dried thyme, salt, and pepper into the beef mixture. Cook for one minute until fragrant.
  4. In a large bowl, whisk together the cream of mushroom soup, cream of celery soup, dry onion soup mix, and beef broth until smooth.
  5. Stir the cooked ground beef mixture and the uncooked rice into the soup mixture until everything combines well.
  6. Pour the entire mixture into the prepared baking dish, spreading it into an even layer.
  7. Cover the baking dish tightly with aluminum foil. Bake for 45 minutes.
  8. Remove the foil. Sprinkle the Swiss cheese and cheddar cheese evenly over the top of the casserole.
  9. Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the rice is tender.
  10. Remove from the oven. Sprinkle the crispy fried onions over the melted cheese. Let the casserole rest for 5 minutes before you serve it.

Notes

  • You can prepare this casserole completely, cover it, and refrigerate it for up to 24 hours before baking. Add about 10 minutes to the initial covered baking time if baking from cold.
  • For a richer onion flavor, caramelize the fresh onion slowly before adding the ground beef.
  • Use pre-cooked rice if you prefer a shorter baking time, but adjust the liquid amount slightly.
