1.5 lbs ground beef (80/20 recommended)
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely minced
1 large egg, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 tablespoon olive oil, for searing
2 tablespoons butter
8 oz cremini mushrooms, sliced
1/2 cup chopped yellow onion
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon dried thyme
1/2 teaspoon Dijon mustard
1/4 cup heavy cream (optional, for richer gravy)
Instructions
In a medium bowl, combine the ground beef, breadcrumbs, milk, minced onion, egg, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
Divide the mixture into 4 equal portions and form them into oval-shaped patties, about 3/4 inch thick.
Heat the olive oil in a large skillet over medium-high heat. Sear the beef patties for 3 to 4 minutes per side until nicely browned. Remove the patties from the skillet and set them aside on a plate.
Reduce the heat to medium. Add the butter to the same skillet. Add the sliced mushrooms and chopped onion. Cook, stirring occasionally, until the onions are soft and the mushrooms have released their liquid and browned, about 6 to 8 minutes.
Sprinkle the flour over the mushroom and onion mixture. Stir constantly for 1 minute to cook out the raw flour taste.
Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the pan. Stir in the dried thyme and Dijon mustard. Bring the mixture to a simmer and let it cook until the gravy thickens slightly, about 3 minutes.
If using, stir in the heavy cream now. Taste the gravy and add more salt and pepper if needed.
Return the seared beef patties to the skillet, nestling them into the gravy. Reduce the heat to low, cover the skillet, and let the patties simmer gently in the gravy for 10 to 15 minutes, or until cooked through and juicy.
Serve the Salisbury steak patties immediately, spooning plenty of the rich mushroom gravy over the top. This pairs well with mashed potatoes or egg noodles for a hearty homestyle meal.
Notes
For extra flavor in the patties, substitute half of the breadcrumbs with crushed saltine crackers.
If you prefer a smoother gravy, strain the finished gravy through a fine-mesh sieve before returning the patties to the pan.
You can make this a Crock Pot Salisbury Steak by searing the patties, placing them in the slow cooker, pouring the gravy ingredients over them, and cooking on low for 4 to 6 hours.
