Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
2 cups fresh plums, pitted and sliced
1/2 cup all-purpose flour (for topping)
1/4 cup brown sugar (for topping)
2 tablespoons cold unsalted butter (for topping)
1/2 teaspoon ground cinnamon (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, whisk together 2 cups of flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Alternate adding the dry ingredients mixture and the milk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
Spread the batter evenly into the prepared cake pan. Arrange the sliced fresh plums over the batter.
Prepare the crumb topping: In a small bowl, combine the remaining 1/2 cup flour, brown sugar, and cinnamon. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
Sprinkle the crumb topping evenly over the plums.
Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
Notes
You can use any variety of fresh plums, such as cherry plums or European plums, for this recipe.
For an extra buttery dessert flavor, use high-quality unsalted butter.
This cake is excellent served slightly warm with a dusting of powdered sugar if you skip the crumb topping.
