This foolproof recipe delivers the best moist banana bread every time you use your overripe bananas. It is simple to make in one bowl with no mixer required, resulting in a tender crumb perfect for breakfast or a snack.

  • 3 large, very ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed ripe bananas, melted butter, granulated sugar, and brown sugar. Whisk these wet ingredients together until they are just combined.
  3. Add the eggs and vanilla extract to the banana mixture. Whisk until the mixture is smooth.
  4. In a separate, smaller bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  5. Add the dry ingredients to the wet ingredients. Use a rubber spatula to mix until just combined. Do not overmix; a few streaks of flour are acceptable.
  6. If you are adding nuts or chocolate chips, gently fold them in now.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 50 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs attached.
  9. Let the banana bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

  • If you prefer banana nut bread, use walnuts. For chocolate chip banana bread, use semi-sweet or milk chocolate chips.
