Make these easy McGriddle Bites to capture the sweet and savory flavor of the classic sandwich in a convenient, bite-sized muffin form. This recipe is perfect for quick breakfasts, meal prep, or grab-and-go eating.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup maple syrup (plus extra for serving)
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fully cooked breakfast sausage, crumbled
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup standard muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, maple syrup, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are acceptable.
  5. Gently fold in the crumbled breakfast sausage and shredded cheddar cheese.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the McGriddle Bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Serve warm with extra maple syrup for dipping.

Notes

  • For a high protein breakfast bites version, substitute regular pancake mix with a protein pancake mix.
  • These are excellent for freezer breakfast meals; cool completely, then store in an airtight container in the freezer for up to three months. Reheat in the microwave or oven.
  • You can substitute the sausage with cooked bacon pieces or diced ham for a variation.
