  • 1/2 red onion, finely diced
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Tortilla chips, for serving

Instructions

  1. Combine the rinsed black beans, black-eyed peas, thawed corn, tomatoes, red bell pepper, green bell pepper, red onion, minced jalapeño (if using), and cilantro in a large mixing bowl.

  3. Pour the dressing over the bean and vegetable mixture.
