1 cup frozen corn, thawed
1 cup cherry or grape tomatoes, halved
1 red bell pepper, diced
1 green bell pepper, diced

1 jalapeño pepper, seeded and minced (optional)
1/2 cup fresh cilantro, chopped
1/4 cup olive oil
1/4 cup fresh lime juice
1 teaspoon ground cumin
1/2 teaspoon salt

Instructions
Combine the rinsed black beans, black-eyed peas, thawed corn, tomatoes, red bell pepper, green bell pepper, red onion, minced jalapeño (if using), and cilantro in a large mixing bowl.
In a separate small bowl, whisk together the olive oil, fresh lime juice, ground cumin, salt, and black pepper to create the zesty lime dressing.
Pour the dressing over the bean and vegetable mixture.
