Make this creamy, cheesy chicken cobbler casserole using store-bought biscuit mix for a quick, comforting family dinner that tastes like your favorite restaurant biscuits.

  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 package (10 ounces) refrigerated biscuit dough (like Red Lobster Cheddar Bay Biscuit mix, if available, or standard buttermilk biscuits)
  • 1/4 cup melted butter
  • 1 teaspoon dried parsley (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, frozen vegetables, onion powder, garlic powder, and black pepper. Mix until all ingredients are evenly coated.
  3. Stir in the shredded cheddar cheese into the chicken mixture.
  4. Pour the entire chicken mixture into the prepared baking dish and spread it into an even layer.
  5. Open the refrigerated biscuit dough. Cut each biscuit into quarters.
  6. Arrange the biscuit quarters evenly over the top of the chicken filling. Do not overlap them too much; leave small spaces between pieces.
  7. Brush the tops of the biscuit pieces generously with the melted butter. Sprinkle with dried parsley, if using.
  8. Bake for 25 to 30 minutes, or until the filling is bubbly and the biscuit topping is golden brown and cooked through.
  9. Let the chicken cobbler rest for 5 minutes before serving hot.
