Make a flavorful, customizable chicken burrito bowl at home. This recipe uses seasoned chicken, fresh vegetables, and simple components, making it perfect for quick weeknight dinners or stress-free meal prepping for lunches.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup white rice or brown rice, cooked
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen or canned corn, drained
  • 1 cup salsa or pico de gallo
  • Optional toppings: Shredded lettuce, avocado slices, shredded cheese, Greek yogurt or sour cream, fresh cilantro, lime wedges

Instructions

  1. Prepare the chicken seasoning by mixing the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
  2. Rub the seasoning mix evenly over the chicken breasts.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6 to 8 minutes per side, until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  4. Remove the chicken from the skillet and let it rest on a cutting board for 5 minutes. Shred the chicken using two forks or slice it into strips.
  5. While the chicken rests, warm the black beans and corn slightly in the same skillet or microwave if desired.
  6. To assemble the bowls, divide the cooked rice among four serving bowls.
  7. Top the rice evenly with the shredded seasoned chicken, black beans, and corn.
  8. Add your preferred toppings, such as salsa, lettuce, cheese, and avocado. Serve immediately with lime wedges.

Notes

  • For meal prep, assemble the bowls with rice, chicken, beans, and corn, but keep the wet toppings like salsa and avocado separate until serving to maintain freshness.
  • To achieve a copycat Chipotle flavor, add a dash of chipotle powder or a teaspoon of adobo sauce from a can of chipotles to your seasoning mix.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
