You make this fresh, flavorful Caprese chicken in the oven. Juicy chicken breasts top with mozzarella, tomatoes, and basil, then bake until done. This is a simple, high-protein dinner perfect for weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 cup sliced fresh mozzarella cheese
  • 1 cup sliced ripe tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. Place the chicken breasts in the prepared baking dish. Drizzle the chicken with olive oil and season with salt, pepper, and dried oregano. Rub the seasoning into the chicken.
  3. Bake the chicken for 15 minutes.
  4. Remove the dish from the oven. Top each chicken breast evenly with the sliced fresh mozzarella cheese and sliced tomatoes.
  5. Return the dish to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).
  6. Remove the chicken from the oven. Sprinkle the fresh chopped basil over the tops of the chicken.
  7. Drizzle the balsamic glaze over the chicken before serving.

Notes

  • You can use cherry or grape tomatoes halved instead of slicing large tomatoes.
  • For extra flavor, you can add a thin layer of pesto under the mozzarella cheese.
