16 ounces cream cheese, softened
8 ounces blue cheese, crumbled
1 cup sour cream
3/4 cup finely chopped green olives (pimento removed)
1/2 cup olive brine
2 ounces gin or vodka (optional)
1 teaspoon garlic powder
Salt and pepper to taste
Extra chopped olives and olive oil for garnish
Instructions
Place the softened cream cheese, blue cheese, sour cream, chopped olives, olive brine, gin or vodka (if using), and garlic powder into a medium bowl.
Use an electric mixer or a sturdy spoon to combine all ingredients until the mixture is smooth and creamy. Scrape down the sides of the bowl as needed.
Taste the dip and add salt and pepper as needed. Remember the brine is salty.
Transfer the dip to a serving bowl.
Cover the bowl and chill the dip in the refrigerator for at least 30 minutes to allow the flavors to meld.
Before serving, garnish the top with a drizzle of olive oil and a sprinkle of finely chopped olives.
Serve cold with crackers, pretzels, or fresh vegetables.
Notes
For an alcohol-free version, omit the gin or vodka and add 1 teaspoon of white wine vinegar for a slight tang.
You can prepare this dip up to 2 days ahead. Keep it covered in the refrigerator and garnish just before serving.
