Make rich, fudgy brownie balls using dates for natural sweetness. This recipe is quick, requires no baking, and yields a chewy, truffle-like treat.

  • 1 cup Medjool dates, pitted
  • 1/2 cup raw walnuts or almonds
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup rolled oats (optional, for texture)
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon water (or more, as needed)
  • Pinch of sea salt
  • 2 tablespoons shredded unsweetened coconut (for rolling, optional)

Instructions

  1. Place the pitted dates, nuts, cocoa powder, oats (if using), vanilla extract, and salt into a food processor.
  2. Process the mixture until it forms a thick, sticky dough. You may need to stop and scrape down the sides several times.
  3. If the mixture seems too dry to stick together, add water one teaspoon at a time until the dough holds its shape when pressed between your fingers.
  4. Roll the dough into small, uniform balls, about 1 inch in diameter. This recipe makes about 12 to 15 balls.
  5. If desired, roll the finished balls in shredded coconut or extra cocoa powder.
  6. Place the date brownie balls on a plate or baking sheet lined with parchment paper.
  7. Chill the balls in the refrigerator for at least 30 minutes before serving to firm them up.

Notes

  • For a richer flavor, use dark cocoa powder.
  • If you do not have a food processor, you can soak the dates in hot water for 10 minutes to soften them before blending in a high-powered blender.
  • Store leftover brownie bites in an airtight container in the refrigerator for up to one week.
