Make perfect, dainty cucumber sandwiches suitable for afternoon tea or light entertaining using this straightforward recipe.

Ingredients

Scale
  • 1 large English cucumber
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon fresh dill, finely chopped (optional)
  • 1 loaf soft white bread (or whole wheat), crusts removed

Instructions

  1. Thinly slice the cucumber. Lay the slices on paper towels and sprinkle lightly with salt. Let them sit for 15 minutes to draw out excess moisture, then gently pat them dry with more paper towels. This step prevents soggy sandwiches.
  2. In a small bowl, combine the softened butter, softened cream cheese, salt, pepper, and optional dill. Mix until the spread is smooth and fully incorporated. This is your best cucumber sandwich filling base.
  3. Take one slice of bread. Spread a thin, even layer of the cream cheese mixture across the entire surface, reaching the edges.
  4. Layer the dried cucumber slices tightly over the cream cheese mixture. Do not overlap them too much; aim for a single, dense layer.
  5. Spread a very thin layer of the cream cheese mixture on a second slice of bread. Place this slice, spread-side down, onto the cucumber layer to complete the sandwich.
  6. Gently press the sandwich together. Trim all four crusts off the bread using a sharp knife.
  7. Cut the sandwich into small, neat shapes. For traditional presentation, cut into three long rectangles (finger sandwiches) or four small triangles.
  8. Chill the finished sandwiches, covered, for at least 30 minutes before serving for the best flavor and texture.

Notes

  • For elegant party appetizers, use a small cookie cutter to create decorative shapes from the assembled sandwiches.
  • If you prefer a less rich filling, substitute half the butter with mayonnaise or use only softened cream cheese.
  • Use high-quality, fresh bread; soft white bread is the classic choice for crustless cucumber sandwiches.
