Make this hearty, cheesy Crockpot Cheeseburger Soup for a satisfying, set-it-and-forget-it family dinner. This slow cooker recipe delivers classic burger flavor without the fuss.

Ingredients

Scale
  • 2 pounds ground beef
  • 1 large onion, chopped
  • 4 cups beef broth
  • 2 cups water
  • 1 pound potatoes, peeled and diced small
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried mustard powder
  • 1/4 teaspoon garlic powder
  • 8 ounces cream cheese, cubed
  • 10 ounces sharp cheddar cheese, shredded
  • 1/2 cup milk (optional, for thinning)
  • Toppings: extra shredded cheese, chopped green onions, bacon bits

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off all the grease completely.
  2. Transfer the browned ground beef and the chopped onion to your slow cooker.
  3. Add the beef broth, water, diced potatoes, salt, pepper, mustard powder, and garlic powder to the slow cooker. Stir to combine.
  4. Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the potatoes are tender.
  5. About 30 minutes before serving, reduce the heat to the lowest setting if using high. Add the cubed cream cheese and stir occasionally until it melts smoothly into the soup base.
  6. Stir in the shredded cheddar cheese until fully melted and the soup is creamy. If the soup is too thick, stir in the milk until you reach your desired consistency.
  7. Taste and adjust seasonings if needed. Serve hot with your favorite toppings.

Notes

  • Browning the beef first is key; it removes excess fat and builds a deeper flavor base for this slow cooker cheeseburger soup.
  • Use a good quality sharp cheddar cheese for the best flavor payoff. Pre-shredded cheese often contains anti-caking agents that can make the soup slightly grainy; shredding your own is recommended.
  • If you want a tangier flavor reminiscent of a real burger, add 1 tablespoon of ketchup and 1 teaspoon of yellow mustard when you add the spices.
