Make flaky, tender cod with a golden, crunchy crust using this simple oven-baked recipe. It is a quick and healthy fish dinner.

  • 4 (6 ounce) cod fillets, about 1 inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. Pat the cod fillets dry using paper towels. This helps the crust adhere and become crispier.
  3. In a small bowl, combine the Panko breadcrumbs, Parmesan cheese, and garlic powder. Mix well.
  4. Brush the tops of the cod fillets lightly with olive oil and season both sides with salt and pepper.
  5. Dip the top side of each fillet into the melted butter, coating it evenly.
  6. Press the buttered side of each fillet firmly into the Panko-Parmesan mixture to create a thick, even crust.
  7. Place the crusted cod fillets on the prepared baking sheet, crust-side up.
  8. Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork, and the topping is golden brown and crispy. Cooking time depends on fillet thickness.
  9. Serve immediately with lemon wedges.

  • For extra moisture, you can place a small pat of butter on top of the crust before baking.
  • To ensure a very crispy crust, you can briefly place the baking sheet under the broiler for the last 1-2 minutes, watching closely to prevent burning.
  • Cod thickness affects cooking time; thicker fillets need longer baking.
