4 (6 ounce) cod fillets, about 1 inch thick
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/4 cup unsalted butter, melted
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Pat the cod fillets dry using paper towels. This helps the crust adhere and become crispier.
In a small bowl, combine the Panko breadcrumbs, Parmesan cheese, and garlic powder. Mix well.
Brush the tops of the cod fillets lightly with olive oil and season both sides with salt and pepper.
