Create this indulgent breakfast treat by stuffing thick bread slices with a sweet cream cheese filling, then pan-frying them until golden brown. This recipe delivers a rich, creamy center and a perfectly crisp exterior, making it a weekend brunch favorite.

  • 8 thick slices brioche or challah bread
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter, for griddling
  • Powdered sugar, for dusting
  • Maple syrup, for serving

Instructions

  1. In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy. This is your cream cheese filling.
  2. Take four slices of bread. Spread half of the cream cheese mixture evenly over one side of each of these four slices.
  3. Place the remaining four slices of bread on top of the cream cheese-covered sides to create four sandwiches. Gently press the edges to seal the filling inside.
  4. In a shallow dish, whisk together the egg, milk, cinnamon, and nutmeg to create the custard batter.
  5. Dip each stuffed sandwich into the custard mixture, coating both sides completely. Allow the bread to soak for about 15 seconds per side; do not over-soak.
  6. Melt butter on a large griddle or non-stick skillet over medium heat.
  7. Cook the stuffed French toast for 3 to 4 minutes per side, until golden brown and the filling is warm. You may need to cook in batches.
  8. Remove the French toast from the griddle. Dust generously with powdered sugar and serve immediately with maple syrup.

Notes

  • Use thick-cut bread, like brioche or challah, for the best texture and to prevent the filling from leaking out during cooking.
  • For a cheesecake style result, chill the assembled sandwiches in the refrigerator for 30 minutes before dipping them in the custard.
  • If you want to add fruit, gently fold 1/2 cup of fresh or thawed blueberries or sliced strawberries into the cream cheese filling before spreading.
