Create impressive, crowd-pleasing Cranberry Brie Bites using flaky puff pastry. These simple appetizers feature gooey, melted brie cheese topped with tart cranberry sauce, perfect for any festive gathering.
8 ounces brie cheese, cut into small cubes (rind left on)
1/2 cup cranberry sauce (whole berry or jellied)
1/4 cup chopped pecans (optional)
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini muffin tin.
Unfold the thawed puff pastry sheets on a lightly floured surface. Use a 2.5-inch round cookie cutter to cut out circles from the pastry. You should get about 24 circles.
Gently press each pastry circle into the cups of the mini muffin tin, forming a small cup shape.
Place one small cube of brie cheese into the bottom of each pastry cup.
Top the brie with about 1/2 teaspoon of cranberry sauce. If using, sprinkle a few chopped pecans over the cranberry sauce.
Brush the edges of the exposed pastry lightly with the beaten egg wash.
Bake for 12 to 15 minutes, or until the pastry is golden brown and the brie cheese is melted and gooey.
Carefully remove the Cranberry Brie Bites from the muffin tin and let them cool slightly on a wire rack before serving warm.
Notes
For a whole baked brie presentation, place a wheel of brie in a small oven-safe dish, top with cranberry sauce and pecans, and bake until soft.
If you do not have a mini muffin tin, you can use a standard muffin tin, but the baking time may increase slightly.
Use high-quality brie for the best creamy texture when melted.
