Create a satisfying, low-carb pizza experience with this high-protein cottage cheese pizza bowl. It uses cottage cheese as a base instead of crust, making it a fast, keto-friendly meal perfect for lunch or a quick dinner.

  • 1 cup low-fat cottage cheese
  • 2 tablespoons marinara sauce (low sugar preferred)
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons mini pepperoni slices
  • 1/4 teaspoon dried oregano
  • Pinch of garlic powder
  • Optional: Sliced bell peppers, mushrooms, or olives

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare your microwave/air fryer.
  2. In an oven-safe bowl (about 10-12 oz size), spread the cottage cheese evenly across the bottom to form your base.
  3. Spoon the marinara sauce over the cottage cheese layer.
  4. Sprinkle the mozzarella cheese evenly over the sauce.
  5. Distribute the pepperoni slices and any other desired vegetable toppings over the cheese.
  6. Season the top with dried oregano and garlic powder.
  7. If baking: Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  8. If microwaving: Microwave on high for 60-90 seconds until the cheese is melted.
  9. If air frying: Cook at 375°F (190°C) for 5-7 minutes until the cheese is melted and slightly browned.
  10. Let the bowl cool for a minute before you eat it directly from the bowl.

Notes

  • For a smoother base, you can blend the cottage cheese with a fork or immersion blender before placing it in the bowl.
  • This recipe is excellent for meal prep; assemble the bowls without baking and store them covered in the refrigerator for up to three days. Bake or microwave when ready to eat.
