  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the chicken: Season chicken breasts with salt and pepper. Grill or pan-fry until cooked through (internal temperature reaches 165°F). Let cool slightly, then dice or shred.

  3. Boil the eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, remove from heat, cover, and let stand for 10 minutes. Immediately transfer eggs to an ice bath, peel, and quarter.
  4. Make the vinaigrette: In a small bowl or jar, whisk together the red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Slowly drizzle in the olive oil while continuously whisking until the dressing emulsifies. If using bacon drippings, whisk them in now.
  5. Assemble the salad: Arrange the chopped romaine lettuce as the base on a large platter or in individual bowls.
  6. Layer the ingredients: Arrange the cooked chicken, bacon crumbles, tomatoes, avocado, hard-boiled eggs, and blue cheese in distinct, neat rows across the top of the lettuce. This layering technique creates the classic visual appeal.
