  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Beat the softened butter, granulated sugar, and brown sugar together in a large bowl until the mixture is light and fluffy. This takes about 3 minutes.
  2. Add the egg and vanilla extract to the butter mixture. Beat until just combined. Do not overmix at this stage.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Stop mixing as soon as no dry streaks of flour remain.
  5. Wrap the cookie dough in plastic wrap and chill in the refrigerator for at least 1 hour. Chilling helps prevent spreading.
  6. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  7. Roll the chilled dough into small balls, about 1 inch in diameter, or press the dough through a cookie press fitted with your desired shape.
  8. Place the shaped cookies about 2 inches apart on the prepared baking sheets. You can gently press the tops with the tines of a fork to create a crosshatch pattern if desired.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden brown. The centers should still look pale.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • For the best melt-in-your-mouth texture, make sure your butter is truly softened, not melted.
  • You can substitute some of the granulated sugar with powdered sugar for an even softer cookie.
