  • 1/2 cup powdered sugar, plus 1 cup for coating
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans or walnuts (optional, omit for nut-free)
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy. Beat in the vanilla extract.
  3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. If using, mix in the chopped nuts.
  4. Roll the dough into small, uniform balls, about 1 inch in diameter. Place them 2 inches apart on the prepared baking sheets. Bake for 10 to 12 minutes, or until the edges are barely set and the bottoms are light golden. Do not overbake; the tops should remain pale.
  5. While the cookies cool slightly (about 5 minutes), prepare the coating: In a shallow dish, combine the remaining 1 cup powdered sugar, the granulated sugar, and the ground cinnamon. Mix well.
  6. While the cookies are still warm, roll each one thoroughly in the cinnamon sugar mixture. Let the cookies cool completely on a wire rack. For a thicker coating, roll the cooled cookies a second time in the cinnamon sugar mixture.
