Make soft, chewy Christmas Gooey Butter Cookies using yellow cake mix for a simple, festive holiday treat coated in powdered sugar.

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 package (8 oz) cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup powdered sugar, for rolling
  • 1/2 cup festive red and green sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the cake mix, 1/2 cup melted butter, 1 egg, and 1 teaspoon vanilla extract. Mix until a soft dough forms.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add the second egg, 1 teaspoon vanilla extract, and almond extract. Beat until fully combined and creamy.
  4. Place the powdered sugar and sprinkles into two separate shallow dishes.
  5. Take about 1 tablespoon of the dough and roll it into a ball. Dip the dough ball completely into the powdered sugar, coating all sides.
  6. Next, dip the sugared dough ball into the festive sprinkles, pressing lightly so they adhere.
  7. Place the coated dough ball onto the prepared baking sheet.
  8. Bake for 10 to 12 minutes. The edges will look set, but the center will still look slightly soft and gooey. Do not overbake.
  9. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely. The gooey center will set as they cool.

Notes

  • For a true St. Louis Gooey Butter Cookie texture, slightly underbake them. They firm up as they cool.
  • You can make the dough balls ahead of time and chill them for up to 24 hours before rolling and baking.
  • If you do not have festive sprinkles, you can roll the finished cookies in extra powdered sugar only for a classic look.
