1 box (12 oz) jumbo pasta shells
2 cups cooked, shredded chicken
1 container (15 oz) ricotta cheese
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese, divided
1/2 cup heavy cream
1/4 cup butter
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups prepared Alfredo sauce
Instructions
Cook jumbo shells according to package directions until al dente. Drain and rinse with cold water.
In a bowl, combine the shredded chicken, ricotta cheese, Parmesan cheese, and 1/2 cup of the mozzarella cheese. Mix well.
Prepare a simple Alfredo sauce: Melt the butter in a saucepan over medium heat. Add the minced garlic and cook for one minute until fragrant.
Whisk in the heavy cream and bring to a gentle simmer. Cook until the sauce thickens slightly, about 3 minutes. Remove from heat and stir in the salt and pepper.
Pour half of the prepared Alfredo sauce into the chicken and cheese mixture and stir to combine.
Preheat your oven to 375 degrees Fahrenheit. Spread a thin layer of the remaining Alfredo sauce in the bottom of a 9×13 inch baking dish.
Stuff each cooked shell with the chicken and cheese filling. Arrange the filled shells in the baking dish over the sauce.
Pour the remaining Alfredo sauce evenly over the stuffed shells. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.
Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
Notes
For a make ahead freezer meal, assemble the shells in a foil pan, cover tightly, and freeze. Thaw overnight in the refrigerator before baking, or add 15 minutes to the covered baking time if baking from frozen.
You can substitute store-bought Alfredo sauce for the homemade sauce to save time on a weeknight.
Serve with a side salad and garlic bread for a complete family friendly meal.
