Make this easy breakfast sandwich recipe using fresh mozzarella, tomato, and basil on your favorite breakfast bread for a gourmet morning meal.

  • 2 slices thick-cut bread (sourdough or brioche recommended)
  • 1 tablespoon butter or olive oil
  • 2 large eggs
  • 2 ounces fresh mozzarella, sliced thinly
  • 2 slices ripe tomato
  • 4 fresh basil leaves
  • 1 teaspoon balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. Lightly butter or brush olive oil on one side of each bread slice.
  2. Heat a non-stick skillet over medium heat. Cook the eggs to your preference (fried or scrambled). Season the eggs with salt and pepper.
  3. Place the bread slices, buttered-side down, in the skillet. Toast until golden brown, about 2 to 3 minutes. Remove the bread.
  4. Place the mozzarella slices on one piece of toasted bread. Top with the cooked eggs.
  5. Layer the tomato slices and basil leaves over the eggs.
  6. Drizzle the balsamic glaze evenly over the tomato and basil.
  7. Place the second slice of toast on top to complete the sandwich. Slice in half and serve immediately for a quick morning sandwich.

Notes

  • To prevent the fresh mozzarella from releasing too much water, pat the slices dry with a paper towel before assembling the sandwich.
  • For a make ahead breakfast sandwiches option, prepare the eggs and toast the bread ahead of time; assemble just before serving.
  • Use a thick, sturdy bread like sourdough or brioche to support the wet ingredients.
  • If you do not have balsamic glaze, reduce 1/4 cup of balsamic vinegar over low heat until it coats the back of a spoon.
