1 cup fresh Roma tomatoes, diced small
1/4 cup fresh basil, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: Balsamic glaze for drizzling
For serving: Pita chips, crackers, or baguette slices
Instructions
In a medium bowl, combine the softened Boursin cheese or cream cheese with the minced garlic. Mix until smooth.
In a separate small bowl, combine the diced tomatoes, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss to coat the tomatoes and basil.
Spread the cheese mixture evenly into a serving dish.
Spoon the tomato and basil mixture over the cheese layer.
If using, drizzle a small amount of balsamic glaze over the top for presentation.
Serve the Creamy Bruschetta Dip immediately with your preferred dippers. You can chill this dip for up to 2 hours before serving if needed.
Notes
For a richer flavor, use a mix of ricotta, mozzarella, and Parmesan cheese instead of Boursin.
