1/2 cup breadcrumbs (Panko recommended for texture)
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg, lightly beaten (or flax egg for vegan)
1 tablespoon Worcestershire sauce (ensure vegan if needed)
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon olive oil for cooking
Instructions
Place the rinsed and dried black beans on a baking sheet lined with paper towels. Let them air dry for at least 30 minutes, or gently pat them very dry. Moisture removal is key to avoiding mush.
In a large bowl, mash about two-thirds of the dried beans with a fork or potato masher until mostly smooth but still retaining some texture. Leave the remaining one-third whole.
Mix all ingredients gently with your hands until just combined. Do not overmix, as this develops gluten and can make the patties tough or mushy.
Divide the mixture into four equal portions and form firm patties, about 3/4 inch thick. Press them firmly together.
Place the formed patties on a plate lined with parchment paper and chill in the refrigerator for at least 30 minutes. This helps them set before cooking.
To cook, heat a lightly oiled skillet or grill pan over medium heat. Cook the patties for 4 to 5 minutes per side until heated through and a nice crust forms. For grilling, brush the grates lightly with oil first.
