1 large yellow onion, chopped
3 carrots, peeled and sliced
3 celery stalks, sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon black pepper
1/2 teaspoon salt (or to taste)
1 (14.5 ounce) can diced tomatoes, undrained
1 cup chopped potatoes (Yukon Gold or Russet)
1 cup chopped zucchini or yellow squash
1 cup green beans, fresh or frozen
1/2 cup frozen peas
6 cups vegetable broth
1 bay leaf
1 tablespoon tomato paste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic, thyme, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
Stir in the diced tomatoes (with their juice), chopped potatoes, zucchini, green beans, tomato paste, and vegetable broth. Add the bay leaf.
Bring the soup to a boil, then reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the potatoes are tender.
Stir in the frozen peas. Cook for an additional 5 minutes, uncovered, until the peas are heated through.
Remove and discard the bay leaf before serving. Taste and adjust salt and pepper if needed.
Notes
For a richer flavor, substitute 1 teaspoon of onion powder and 1 teaspoon of garlic powder if fresh garlic is unavailable.
You can use frozen mixed vegetables instead of fresh green beans and peas for a quicker preparation.
